Ingredients
  • 2tbsp Coconut oil
  • 450g Carrotsroughly chopped
  • 1medium onionfinely sliced
  • 1 clove of garliccrushed
  • 1tsp ground coriander
  • 1litre vegetable stock
  • largehandful fresh corianderfinely chopped
  • salt & pepperto taste
Instructions
  1. Heat the oil in a large saucepan, add the onions and the carrots. Cook for 3-4 minutes to allow them to soften.
  2. Add the ground coriander, garlic and season well with salt and pepper, stir well.
  3. Add the stock, bring the mixture to the boil and then turn it down to a simmer for around 20 minutes, until the carrots are tender.
  4. Using a stick blender or food processor, blend until smooth.
  5. Add the fresh coriander and stir through well.
  6. Adjust the seasoning to your taste and serve immediately.
