Here’s a great Christmas cake recipe that will be a welcome addition to any festive gathering whilst still staying on the healthier side, there is an option to add a little booze if you want to!

INGREDIENTS
- 600 g mixed dried fruit
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1 tsp vanilla extract
- 1/4 tsp ground nutmeg
- 1 orange zest & juice
- 3 tbsp Coconut oil melted
- 200 g Ground almonds
- 50 g walnuts roughly chopped
- Liqueur of your choice completely optional
HOW TO MAKE
- Preheat oven to 150/130 fan/gas mark 3.
- Prepare a 7 inch/20cm tin with baking paper around the sides and the base.
- In a large bowl add all of the ingredients and stir until well combined.
- Add the batter to the baking tin, place in the centre of the oven. Bake for 1 hour & 30 minutes or until a skewer comes out clean. You may need to cover the top with more baking paper to prevent it over browning so keep an eye on the colour!
- Allow to cool and place in an air tight container in the fridge. This will keep fro up to 1 month.
- * If you wanted to add a bit of booze (as it is Christmas) as soon as the cake has been removed from the oven, take a skewer and make holes in the top of the cake. Drizzle the liqueur through the holes to allow it to infuse. Orange liqueur works really well.
