This vibrant pesto takes makes the most of great summer produce. Peas and mint are in abundance this time of year and are a match made in heaven.
This pesto makes a great dipping sauce, it livens up cooked chicken or is tasty mixed with quinoa, the possibilities are endless!
- 150 g peas (defrosted if frozen)
- 5 g fresh mint
- 5 g Fresh basil
- 1 Garlic clove
- 2 tbsp olive oil
- Squeeze of lemon juice
- salt & pepper
